Recipe for Maharashtrian biryani
Here is a recipe for Maharashtrian biryani:
Ingredients:
- 2 cups basmati rice
- 2 tablespoons ghee or oil
- 2 bay leaves
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 1 small onion, sliced
- 1/2 teaspoon turmeric
- Salt, to taste
- 2 cups water
- 1 cup mixed vegetables (such as peas, carrots, beans, and potatoes)
- 1 cup cooked chicken or lamb (optional)
- 1/2 cup yogurt
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh mint
- 2 tablespoons chopped fresh dill
Instructions:
- Rinse the rice in cold water and soak it in water for 30 minutes.
- Heat the ghee or oil in a large saucepan over medium heat. Add the bay leaves, cinnamon stick, cardamom pods, and cloves and fry for a few seconds until fragrant.
- Add the onions and fry until they are golden brown.
- Add the turmeric and salt, and stir to combine.
- Add the water and bring to a boil.
- Add the drained rice, mixed vegetables, and cooked chicken or lamb (if using). Stir to combine.
- Reduce the heat to low, cover the saucepan with a tight-fitting lid, and cook for 18-20 minutes or until the rice is tender and the water has been absorbed.
- Stir in the yogurt, cilantro, mint, and dill. Cover the saucepan with the lid and cook for a few more minutes.
- Remove the saucepan from the heat and let it sit for 10 minutes. Fluff the rice with a fork and serve hot. Enjoy!
